Sprite Cake with Orange Glaze

The natives were restless for something sweet, so this is how I calmed them.

Actually, we had company over for dinner the other night and I couldn’t think of a better excuse to make a dessert!  Course, the natives totally ratted me out (both of them) and told company that I NEVER let them have sweets.  Are you kidding me?  So not fair, lol.

Anyway, I had just run across this recipe on a great site (NoblePig.com) that I stumbled upon.  Stumbling is actually a great way to pass some time, and I recommend everyone at least try it out.  The original recipe calls for 7-up (which I would have preferred), but for some reason I can’t find it when I need it.  Oh well, Sprite works just as well, and hence the reason for the name change.

The natives enjoyed the HECK out of this cake and were upset when after the first night half the cake was gone.   Between the three of us, company, and two pieces going down the street to the sick neighbor, what do you expect?  The natives didn’t think sharing with the neighbor was fair and wanted their pieces back.  Stingy natives!   They’ll get a new sweet this weekend since I ran across a cream-cheese brownie recipe that looked awfully yummi-fied…

Sprite Cake with Orange Glaze (adapted from NoblePig.com)

Sprite Cake:

  • 1 package Yellow Cake Mix
  • 1 small package Lemon Jello
  • 4 large Eggs
  • 1/2 cup Vegetable Oil
  • 1 cup Sprite or 7 Up soda
  • 1 cup Almonds, sliced or chopped

Orange Glaze:

  • 2 cups Confectioner’s Sugar
  • 4 tablespoons Orange Juice
  • 1/2 teaspoon Pure Vanilla Extract

For the cake:

Add nuts, if desired, to the bottom of a greased and floured bundt cake pan.

In the bowl of a stand mixer, or another large bowl, add the contents of the cake mix, Jello, eggs, vegetable oil and soda.  Beat for three minutes on medium speed.

Pour batter into prepared pan.  Pay no mind the the escapee almond on top there, lol…

Bake in a 350 degree oven for 45 to 60 minutes, or until toothpick inserted in the cake comes out clean and the cake starts to pull away from sides of pan.

Cool in pan for 10 minutes and then flip onto a wire rack to cool completely.

For the Glaze:

Mix together and drizzle over cooled cake.
